To us, Denis Bouchacourt is exactly the sort of producer we love, a jovial but serious creator of moreish wines that are complex, profound and minerally driven. Denis has been rocking the limestone soils of Mâconnais since 2004. This Cuvée Ammonite is as rare as a Dodo burger, with only a few hundred bottled every year. If you have one bottle, you will want to make it your life purpose to find the rest. It is has a wonderful nose of lemon zest and vanilla custard, while its moderately dense palate coats the mouth with notes of butter, toasted brioche and spice. One for fans of richer Chardonnay.
Robin says "This wine is named after the ammonites or large sea fossils that were found in the depths of its soil. Not only do they also decorate the label, but they impart a natural minerality to the wine. A wine of character and depth."
